  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 2 cups chicken or beef broth
  • 1 cup water
  • 8 oz (about 2 cups) uncooked pasta (penne, rotini, or your choice)
  • 1 cup frozen corn (optional)
  • 1 cup black beans, rinsed and drained (optional)
  • 1 cup shredded cheddar or Mexican blend cheese
  • Salt and pepper to taste

  • Diced avocado
