- 8 oz (about 2 cups) uncooked pasta (penne, rotini, or your choice)
- 1 cup frozen corn (optional)
- 1 cup black beans, rinsed and drained (optional)
- 1 cup shredded cheddar or Mexican blend cheese
- Salt and pepper to taste
