  • 1 ripe avocado
  • 1 medium-sized tomato
  • 1/4 red onion
  • 1 medium-sized carrot
  • 1/2 cucumber
  • 1 tablespoon mayonnaise
  • 1 tablespoon olive oil
  • Freshly ground black pepper, to taste


  1. Start by preparing the vegetables. Peel and pit the avocado, then chop it into small pieces. Dice the tomato into similar-sized pieces. Finely chop the red onion. Peel the carrot and cut it into small cubes. Finally, peel the cucumber and dice it.
  2. Combine all the chopped vegetables in a mixing bowl.
  3. In a small bowl, whisk together the mayonnaise and olive oil until well combined.
  4. Pour the dressing over the chopped vegetables in the mixing bowl.
