Bizza Muffins



2 cups flour
2 Tsp garlic salt
2 Tsp onion powder
1 Tsp oregano
2 Tsp baking powder
¼ cup grated parmesan
2 cups whole milk
2 large eggs
2 Tbsp salted butter, melted
1 5-ounce package mini pepperoni, divided
1 cup shredded cheddar
4 Tbsp pizza sauce

Preheat your oven to 375°F.
Chop 3/4 of the mini pepperoni into 1/4″ pieces and set aside.
In a large mixing bowl, combine flour, garlic salt, onion powder, oregano, baking powder, and grated Parmesan cheese.
Stir in milk, eggs, melted butter, and half the package of chopped pepperoni to the batter until combined. The batter will be slightly runny.
Spray a 6-serving muffin tin with cooking spray. (Recipe can be doubled for a 12-muffin tin.)
Fill each muffin cup ¼ way full with batter, add 1 Tbsp shredded cheddar in the middle, then cover with more batter until ¾ full.
Top with a dollop of pizza sauce, more cheddar, and mini pepperoni pieces. Press the toppings slightly into the batter.
Bake for 20-22 minutes, until muffins form a dome and are cooked through.
Let rest in the tin for 5 minutes before removing.
