1. Prepare the Pork:
- In a bowl, mix the soy sauce, oyster sauce, and hoisin sauce. Add the thinly sliced pork and toss to coat. Let it marinate for at least 15 minutes.
2. Cook the Pork:
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the marinated pork and stir-fry until browned and cooked through, about 5-7 minutes. Remove the pork from the skillet and set aside.
3. Stir-Fry the Vegetables:
- In the same skillet, add the remaining tablespoon of vegetable oil.
- Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
- Add the sliced onion and julienned carrot, and stir-fry for 2-3 minutes until they begin to soften.
- Add the sliced cabbage and continue to stir-fry for another 5-7 minutes until the cabbage is tender but still crisp.
4. Combine and Simmer:
- Return the cooked pork to the skillet.
- Pour in the chicken broth or water, and stir everything together. Let it simmer for a few minutes to allow the flavors to meld.
- If you prefer a thicker sauce, stir in the cornstarch mixture and cook for an additional 1-2 minutes until the sauce thickens.
5. Finish and Serve:
- Drizzle the sesame oil over the stir-fry and give it a final stir.
- Remove from heat and garnish with chopped green onions and sesame seeds if desired.
6. Serve:
- Serve the stir-fried cabbage and pork hot, over steamed rice or noodles.
