Instructions
- Finely crush the sugar cookies in a food processor or by placing them in a large Ziploc bag and crushing with a rolling pin until fine crumbs are formed. In a medium bowl, combine the crushed cookies and melted butter, mixing until well incorporated. Press this mixture firmly into the bottom of a 9×13 inch baking dish to create the crust.
- In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract with an electric mixer until smooth and creamy. Set aside.
- In a separate bowl, whisk together the milk and instant vanilla pudding mix for 2 minutes, or until thickened. Let stand for 5 minutes.
- Gently fold the pudding mixture into the cream cheese mixture until fully combined.
- Spread half of the cream cheese pudding mixture evenly over the cookie crust in the baking dish.
- In a clean bowl, combine 1.5 cups of the thawed whipped topping with 1/2 cup of Christmas sprinkles. Gently fold to distribute the sprinkles.
- Spread the sprinkle-infused whipped topping evenly over the cream cheese pudding layer.
- Top with the remaining half of the cream cheese pudding mixture.
- Spread the remaining whipped topping (plain, without sprinkles) over the top layer. Garnish with additional Christmas sprinkles.
- Cover the baking dish tightly with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the lasagna to set and flavors to meld before serving.
Tips
- For easier cutting, chill your Christmas Cookie Lasagna thoroughly. A sharp knife wiped clean between slices will give you neat portions.
- If you don't have a food processor, a heavy-duty Ziploc bag and a rolling pin work perfectly for crushing cookies. Just ensure the crumbs are fine for a cohesive crust.
- Vary the flavor! Use peppermint extract instead of vanilla in the cream cheese layer for a minty twist, or substitute chocolate pudding mix for vanilla.
- Make ahead magic: This dessert is ideal for preparing the day before your event, as it allows the layers to set beautifully and flavors to deepen overnight.
- Get creative with garnishes! Besides sprinkles, consider a drizzle of chocolate sauce, a dusting of cocoa powder, or even a few miniature candy canes for extra festive flair.
