Stuffed Catfish with cheese, spinach, and shrimp

Ingredients:

  • 4 catfish fillets
  • 1 cup cooked shrimp, chopped
  • 1 cup chopped spinach
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 1/4 teaspoon paprika
  • Lemon wedges for serving
  • Chopped fresh parsley for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
  4. In a mixing bowl, combine the cooked shrimp, wilted spinach, shredded mozzarella cheese, grated Parmesan cheese, lemon juice, salt, pepper, and paprika. Mix until well combined.
  5. Lay the catfish fillets flat on a cutting board. Divide the shrimp and spinach mixture evenly among the fillets, spreading it over one side of each fillet.
  6. Roll up the catfish fillets, starting from the widest end, and secure with toothpicks if necessary.
  7. Place the stuffed catfish fillets in a baking dish lightly greased with olive oil.
  8. Drizzle a little olive oil over the stuffed catfish fillets and sprinkle with additional salt, pepper, and paprika, if desired.
  9. Bake in the preheated oven for 20-25 minutes, or until the catfish is cooked through and flakes easily with a fork.
  10. Once cooked, remove the toothpicks from the stuffed catfish fillets.
  11. Serve the stuffed catfish hot, garnished with chopped fresh parsley and lemon wedges on the side.
