Stuffed Catfish with cheese, spinach, and shrimp

Ingredients:
- 4 catfish fillets
- 1 cup cooked shrimp, chopped
- 1 cup chopped spinach
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon lemon juice
- Salt and pepper to taste
- 1/4 teaspoon paprika
- Lemon wedges for serving
- Chopped fresh parsley for garnish
Instructions:
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
- In a mixing bowl, combine the cooked shrimp, wilted spinach, shredded mozzarella cheese, grated Parmesan cheese, lemon juice, salt, pepper, and paprika. Mix until well combined.
- Lay the catfish fillets flat on a cutting board. Divide the shrimp and spinach mixture evenly among the fillets, spreading it over one side of each fillet.
- Roll up the catfish fillets, starting from the widest end, and secure with toothpicks if necessary.
- Place the stuffed catfish fillets in a baking dish lightly greased with olive oil.
- Drizzle a little olive oil over the stuffed catfish fillets and sprinkle with additional salt, pepper, and paprika, if desired.
- Bake in the preheated oven for 20-25 minutes, or until the catfish is cooked through and flakes easily with a fork.
- Once cooked, remove the toothpicks from the stuffed catfish fillets.
- Serve the stuffed catfish hot, garnished with chopped fresh parsley and lemon wedges on the side.
