  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (8 ounces) tomato sauce
  • 1 cup frozen corn kernels
  • 1 cup shredded cheddar cheese
  • 2 cups cooked macaroni or pasta of your choice
  • Salt and pepper, to taste
  • Optional toppings: chopped parsley, sliced green onions


  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until it’s browned and no longer pink. Drain any excess fat.
  3. Add diced onions and minced garlic to the skillet with the cooked beef. Cook for about 3-5 minutes until the onions are softened.
  4. Stir in the diced tomatoes, tomato sauce, and frozen corn kernels. Season with salt and pepper to taste. Let the mixture simmer for about 5-10 minutes to allow the flavors to meld.
  5. In a large mixing bowl, combine the cooked pasta and the beef mixture. Mix well until everything is evenly distributed.
  6. Transfer the mixture into a greased 9×13 inch baking dish.
  7. Sprinkle shredded cheddar cheese evenly over the top of the casserole.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
  9. Remove the foil and continue baking for an additional 5-10 minutes until the cheese is golden brown.
  10. Once done, remove the casserole from the oven and let it cool for a few minutes before serving.
  11. Optionally, garnish with chopped parsley or sliced green onions before serving.
