Instructions
1. Make the apple texture hack
Warm a small skillet over medium heat. Add ghee or coconut oil, the grated and well dried chayote or zucchini, a dash of cinnamon, and a pinch of sweetener. Cook two to four minutes until just tender and fragrant. Stir in lemon zest and a drop or two of apple extract if using. Remove from heat and cool to room temperature.
2. Mix the dry base
In a medium bowl, combine hemp hearts, chia seeds, flaxseed meal, almond flour, shredded coconut, cinnamon, apple pie spice, and salt. Stir to blend evenly.
3. Add liquids
In a separate bowl or measuring jug, whisk almond milk, yogurt if using, vanilla, and sweetener until smooth. Adjust sweetness to taste.
4. Combine
Pour the liquid over the dry mixture and stir well. Fold in the cooled apple texture hack. The mixture will look loose at first.
5. Chill
Divide between two small jars or bowls. Cover and refrigerate at least four to six hours, ideally overnight, until thickened.
6. Finish and serve
Stir, then top with walnuts, a dusting of cinnamon, and optional tiny apple dice if you follow a moderate low carb plan. For strict keto, skip real apple and rely on the extract and spices.
