Instructions
- Preheat your oven:
Set it to 425°F (220°C). Line a baking sheet with parchment paper. - Mix dry ingredients:
In a large bowl, whisk together flour, baking powder, sugar, and salt. - Cut in butter:
Add the cold butter cubes and use a pastry cutter or your fingers to mix until the mixture looks like coarse crumbs. - Add strawberries:
Gently toss in the chopped strawberries, coating them lightly with the flour mixture. - Combine wet ingredients:
Stir the milk and vanilla (if using) into the flour mixture just until a soft dough forms. If it’s too dry, add a splash more milk. - Shape the biscuits:
Turn the dough out onto a floured surface. Gently pat it into a 1-inch thick rectangle. Cut out biscuits using a round cutter or glass, or shape them by hand. - Bake:
Place biscuits on the prepared baking sheet. Bake for 12–15 minutes, or until golden on top. - Cool and serve:
Let cool slightly. Enjoy warm with a pat of butter, clotted cream, or a drizzle of honey.
Tip
These are best the day they’re made, but leftovers can be stored in an airtight container and gently reheated the next day.
