Instructions
1. Sauté aromatics
Warm olive oil in a large pot over medium heat. Add onion, bell peppers, and a pinch of salt. Cook 5 to 6 minutes until softened. Stir in garlic and jalapeno and cook 1 minute.
2. Brown the turkey
Add ground turkey. Cook 5 to 7 minutes, breaking it up, until no longer pink.
3. Bloom the spices
Stir in chili powder, cumin, smoked paprika, oregano, cinnamon, cocoa powder if using, and several grinds of black pepper. Cook 1 minute to release aroma.
4. Build the chili
Add pumpkin puree, diced tomatoes, broth, black beans, and zucchini. If using cauliflower rice, stir it in now for extra fiber and volume.
5. Simmer
Bring to a gentle boil, then reduce heat and simmer uncovered 20 to 30 minutes, stirring occasionally, until slightly thickened. Add water if you prefer a looser chili.
6. Brighten and season
Stir in apple cider vinegar or lime juice. Taste and adjust salt and pepper.
7. Portion for meal prep
Divide into 6 containers. Top with cilantro. Add optional garnishes like a spoon of Greek yogurt, green onion, or a few avocado slices just before eating.
