Instructions
- Line a 20cm (8-inch) square baking tin with parchment paper, leaving an overhang on two sides to easily lift out the rocky road later.
- In a large microwave-safe bowl (or a heatproof bowl set over a saucepan of simmering water, ensuring the bowl doesn't touch the water), combine the dark chocolate, unsalted butter, and golden syrup.
- Melt the mixture gently, stirring occasionally, until smooth and fully combined. If using a microwave, heat in 30-second intervals, stirring well after each, to prevent burning.
- Once melted, remove from heat. Stir in the orange zest, orange juice (if using), and a pinch of sea salt (if desired) into the chocolate mixture.
- Add the roughly broken digestive biscuits, miniature marshmallows, and chopped candied orange peel (if using) to the chocolate mixture.
- Fold everything together carefully using a spatula, ensuring all the ingredients are evenly coated in the chocolate.
- Spoon the mixture into the prepared baking tin. Press it down firmly and evenly using the back of the spatula or your hands.
- Refrigerate for at least 2-3 hours, or until completely set and firm.
- Once set, use the parchment paper overhang to lift the rocky road out of the tin. Place it on a cutting board.
- Using a sharp, warm knife (run under hot water and wipe dry), cut into squares or bars of your desired size. Enjoy!
Tips
- For extra texture and flavor, try adding a handful of chopped nuts like pistachios or almonds, or even some dried cranberries, alongside the marshmallows and biscuits.
- To make clean cuts, warm your knife under hot water and wipe it dry between each slice. This helps prevent the chocolate from cracking and gives you neat pieces.
- If you prefer a milk chocolate or white chocolate version, simply substitute the dark chocolate, but note that the sweetness level will change. Adjust other ingredients like golden syrup if necessary.
- Ensure your marshmallows are miniature; larger marshmallows can be cut into smaller pieces, but miniature ones integrate best and prevent large air pockets.
- Rocky road stores well in an airtight container in the refrigerator for up to a week. For best texture, let it sit at room temperature for 10-15 minutes before serving.
