Filling
- 2 packed cups shredded iceberg or romaine lettuce
- 4 oz thinly sliced Genoa salami
- 4 oz deli ham or capicola
- 3 oz pepperoni or soppressata
- 4–6 slices provolone (about 4 oz)
- 1 medium ripe tomato, sliced (seed extra juice if very wet)
- ¼ small red onion, thinly sliced
- ⅓ cup sliced pepperoncini or banana peppers, drained
- Optional upgrades: 2 tbsp chopped roasted red peppers, a few olives, or a slice of fresh mozzarella
Dressing
- ¼ cup mayonnaise (Duke’s or Hellmann’s holds best)
- 1 tbsp extra-virgin olive oil
- 1 tbsp red wine vinegar
- 1–2 tbsp Italian vinaigrette or sub dressing (optional but recommended)
- 1 tsp dried Italian seasoning or oregano
- Pinch of salt and black pepper
- Optional: pinch of red pepper flakes or a squeeze of lemon

- 4 hoagie, sub, or Italian rolls
Toast the cut sides if you want structure for meal prep.
Why these amounts work: Too much mayo turns it into slaw. Too little vinegar tastes flat. Too much tomato water sogs the roll by noon. Drain peppers and blot tomatoes.
How to make the viral chopped Italian sandwich
1. Build the pile
On a large cutting board, spread the lettuce first. It acts as a base so meats don’t smear. Layer onion, tomato, peppers, meats, then cheese on top. Cheese on top chops cleaner and doesn’t gum the knife as fast.
2. Chop like a chopped salad
Use a sharp chef’s knife. Make vertical cuts across the pile, turn the board 90 degrees, and cut again. Keep going until pieces are about ¼–½ inch. You want mosaic, not mush. If the pile spreads, fold it back to the center with the knife and keep chopping.

3. Dress on the board

4. Load the rolls
