Instructions
1. Preheat the air fryer to 390 F 200 C for five minutes. Lightly coat the basket with oil spray.
2. Mix the base. In a large bowl, stir cottage cheese and egg whites until smooth. Add onion, garlic, parsley, Italian seasoning, smoked paprika, salt, and pepper. Fold in Parmesan.
3. Add the meat and binder. Gently combine the ground meat with panko or oat flour until just mixed. Do not overwork to keep the texture tender.
4. Portion. Scoop about two tablespoons per meatball, roughly 30 to 35 g each. Roll lightly with damp hands. You should get about 22 to 24 meatballs.
5. Air fry. Arrange meatballs in a single layer with space between. Cook 8 to 10 minutes, shaking the basket or flipping halfway, until browned and the center reaches 165 F on a thermometer.
6. Batch and repeat. Continue with remaining meatballs. Rest cooked meatballs two minutes to lock in juices.
7. Meal prep. Divide into airtight containers with your choice of sides. Popular combos include marinara with zucchini noodles, pesto with roasted broccoli, or tahini yogurt with quinoa and cucumbers.
Storage and reheating
– Refrigerate up to 4 days in airtight containers.
– Freeze up to 3 months. Cool completely, then freeze on a sheet until firm and transfer to bags to prevent sticking.
– Reheat in the air fryer at 350 F for 3 to 5 minutes or microwave in short bursts with a splash of broth or sauce to keep moisture.
Tips
– Extra juicy texture: Do not skip cottage cheese. It disappears into the mix and keeps lean meat tender.
– Gluten free: Use certified gluten free oat flour or crushed gluten free panko.
– Dairy free: Omit Parmesan and cottage cheese, add two more tablespoons of oat flour, and one tablespoon olive oil for moisture.
