1. Prepare the Dough:
- In a small bowl, dissolve the yeast and sugar in the warm water. Let it sit for about 5-10 minutes until it becomes frothy.
- In a large bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then turn it out onto a lightly floured surface and knead for about 8-10 minutes until the dough is smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.
2. Preheat the Oven:
- Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat up.
3. Prepare the Toppings:
- If you haven’t already, cook and shred the chicken (or your choice of meat). Toss it with a little BBQ sauce to coat.
- Thinly slice the red onion, bell pepper, and any other desired vegetables.
4. Assemble the Pizza:
- Punch down the risen dough and turn it out onto a lightly floured surface. Roll it out into your desired pizza shape and thickness.
- Transfer the rolled-out dough to a piece of parchment paper for easy transfer to the oven.
- Spread the BBQ sauce evenly over the dough, leaving a small border for the crust.
- Sprinkle half of the shredded mozzarella cheese over the sauce.
- Distribute the shredded chicken (or other meat) evenly over the cheese.
- Add the sliced red onions, corn kernels, bell pepper slices, or any other toppings you desire.
- Top with the remaining mozzarella cheese.
5. Bake the Pizza:
- Carefully transfer the parchment paper with the pizza onto the preheated pizza stone or directly onto the oven rack.
- Bake for 10-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
6. Garnish and Serve:
- Remove the pizza from the oven and let it cool slightly before slicing.
- Garnish with fresh chopped cilantro and drizzle with extra BBQ sauce if desired.
Tips and Variations
- Spicy BBQ Pizza: Add sliced jalapeños or a sprinkle of red pepper flakes for a spicy kick.
- Vegetarian BBQ Pizza: Use tofu or tempeh as the protein and load up on your favorite vegetables.
- Cheese Variations: Try using smoked gouda or cheddar cheese in addition to or instead of mozzarella for a different flavor.
- Grilled BBQ Pizza: For an extra smoky flavor, cook the pizza on a grill instead of in the oven. Preheat the grill to medium-high heat, and use indirect heat to cook the pizza.
Enjoy your homemade BBQ pizza as a flavorful and satisfying meal that’s sure to please everyone at the table!
