Instructions
1. Warm the pot
Place a large heavy pot over medium heat. Add the olive oil and warm until shimmering.
2. Build the flavor base
Add the onion with a pinch of salt. Cook five to seven minutes until translucent. Stir in the garlic and ginger and cook about one minute until fragrant.
3. Bloom the spices
Add turmeric, cinnamon, and cayenne if using. Stir for thirty seconds to bloom the spices in the oil.
4. Add produce and simmer
Stir in the butternut squash and apples to coat with the aromatics. Pour in the broth and bring to a gentle boil. Reduce to a simmer, cover, and cook fifteen to twenty minutes until the squash is very tender.
5. Blend until silky
Turn off the heat. Use an immersion blender to puree until smooth and velvety. If using a countertop blender, work in batches and return the soup to the pot.
6. Finish and balance
Stir in the coconut milk and lemon juice. Season with salt and plenty of black pepper to taste. Simmer two additional minutes to meld flavors. Adjust thickness with a splash of broth if desired.
7. Garnish and serve
Ladle into bowls and top with pumpkin seeds, parsley, and a light swirl of olive oil or coconut milk.
