Instructions
1. Preheat the air fryer to 325 F for five minutes. Lightly grease silicone donut molds that fit your basket.
2. In a medium bowl, whisk almond flour, coconut flour, baking powder, pumpkin pie spice, cinnamon, and salt.
3. In a separate bowl, whisk pumpkin puree, eggs, Greek yogurt, sweetener, vanilla, and oil until smooth.
4. Add the dry mixture to the wet and stir just until combined. Let the batter rest five minutes to hydrate.
5. Fill the greased molds about three quarters full. For tidy rings, transfer batter to a zip bag, snip a corner, and pipe into the molds.
6. Air fry until the tops are set, lightly golden at the edges, and a toothpick comes out mostly clean, about eight to ten minutes depending on mold size and air fryer model.
7. Cool in the molds five minutes, then carefully invert onto a rack.
8. For the cinnamon coating, mix the sweetener and cinnamon. Lightly brush donuts with a touch of oil or water and dip each side in the mixture.
9. For the pumpkin glaze, whisk all glaze ingredients until smooth and pourable, adding almond milk a little at a time. Dip cooled donuts and let glaze set.
10. Repeat with remaining batter. Enjoy warm or at room temperature.
Tips
– For extra protein, add two tablespoons unflavored whey isolate and increase pumpkin puree by one tablespoon for moisture.
– Allulose tends to brown and dissolve more like sugar and can yield a softer crumb.
– To help minimize glucose spikes, pair a donut with Greek yogurt, eggs, or nuts, and enjoy after a short walk.
– If the batter seems too thick, add one tablespoon unsweetened almond milk. If too thin, sprinkle in a teaspoon of coconut flour and rest two more minutes.
– Use light colored silicone molds for gentler browning. Metal pans can cook faster in an air fryer, so check early.
– Store covered at room temperature one day, refrigerate up to four days, or freeze up to two months. Reheat in the air fryer at 300 F for two to three minutes.
