Instructions
1. Prep the apples. Wash and dry well. Core if desired. Using a sharp knife or mandoline with a guard, slice into thin rounds about one to two millimeters thick for maximum crispness.
2. Prevent browning. In a small bowl, stir lemon juice with water. Lightly brush or mist both sides of the slices to slow oxidation.
3. Season. In a bowl, combine cinnamon and ginger with the optional sweetener and a tiny pinch of salt. Add apple slices and toss gently to coat evenly.
4. Preheat the air fryer to 300 F or 150 C for three minutes.
5. Arrange. Place slices in a single layer in the basket or on racks. Do not overlap. Work in batches as needed.
6. Air fry. Cook for eight minutes, then flip or rotate racks. Continue for four to eight more minutes until edges curl and centers look dry. Total time is usually twelve to sixteen minutes, depending on slice thickness and your machine.
7. Finish. If browning too quickly, reduce temperature to 275 F or 135 C and add two to four minutes. For extra crunch, turn the air fryer off and let chips rest inside for five to ten minutes with the drawer slightly open.
8. Cool and store. Transfer chips to a wire rack to cool completely. Once fully crisp, store in an airtight jar at room temperature. Add a small piece of parchment to absorb moisture. Best within five days.
