### Instructions
1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
2. In a large skillet, brown the ground beef over medium-high heat, breaking it apart with a spoon. Drain any excess grease.
3. Stir in the taco seasoning and water. Bring to a simmer and cook for 5 minutes, or until the liquid has mostly evaporated.
4. Remove the skillet from the heat. Stir in the cream of mushroom soup, black beans, corn, and diced tomatoes with green chilies. Mix until well combined.
5. Spread half of the crushed Fritos corn chips evenly in the bottom of the prepared baking dish.
6. Pour the meat mixture over the Fritos.
7. Sprinkle 1 1/2 cups of shredded cheese over the meat mixture.
8. Bake for 20-25 minutes, or until the casserole is bubbly and the cheese is melted.
9. Remove from the oven. Sprinkle the remaining 1/2 cup of shredded cheese and the remaining crushed Fritos over the top. Return to the oven for another 5 minutes, or until the cheese is completely melted and slightly golden.
10. Let the casserole sit for 5 minutes before serving. Serve with your favorite optional toppings. Enjoy!
