**Instructions**
1. In a large bowl, combine the shredded coconut, chopped dried tropical fruit, rolled oats, and unsweetened cocoa powder. Mix well until everything is evenly distributed.
2. In a separate small bowl, whisk together the almond butter, maple syrup, vanilla extract, and pinch of salt until smooth.
3. Pour the wet ingredients into the dry ingredients. Mix thoroughly with a spoon or your hands until a sticky dough forms. Make sure all the dry ingredients are moistened.
4. Roll the mixture into small, bite-sized balls, about 1-inch in diameter. If the mixture is too sticky, slightly dampen your hands.
5. Place the rolled delights on a parchment-lined baking sheet or plate.
6. If desired, melt the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth. Drizzle the melted chocolate over the delights.
7. Refrigerate for at least 30 minutes to allow them to firm up.
8. Store in an airtight container in the refrigerator for up to a week.
**Short Tips**
* For an extra tropical kick, add a few drops of coconut extract to the wet ingredients.
* Feel free to experiment with different dried fruits or add nuts like chopped cashews or macadamia nuts for added crunch.
* If you don’t have almond butter, peanut butter or cashew butter will work just as well.
* These also freeze beautifully! Store them in an airtight container in the freezer for up to a month. Just let them thaw for a few minutes before enjoying.
