1. Cook the Chicken (if not using pre-cooked)
- Rub chicken breasts with olive oil and seasoning blend.
- Grill or pan-cook over medium heat for 6–7 minutes per side until cooked through.
- Let rest, then chop or shred into bite-sized pieces.
2. Make the Dressing
- In a bowl, whisk together all dressing ingredients until smooth and creamy.
- Taste and adjust seasoning or lime juice as needed.
3. Assemble the Salad
- In a large bowl, combine chopped romaine, tomatoes, black beans, corn, bell pepper, red onion, and chicken.
- Add cheese and avocado just before serving.
- Drizzle with dressing and toss to coat.
4. Top & Serve
- Garnish with tortilla strips and fresh cilantro.
- Serve immediately or chill for 15–20 minutes for enhanced flavor.
