Instructions

1. **Preheat & Prepare:** Preheat your oven to 400°F (200°C).
2. **Season the Pork:** Pat the pork chops dry with paper towels. Season both sides generously with salt and pepper.
3. **Arrange the Pan:** On a large baking sheet (or in a 9×13 inch baking dish), arrange the sliced apples and red onion wedges.
4. **Make the Sauce:** In a small bowl, whisk together the olive oil, apple cider vinegar, maple syrup, Dijon mustard, dried thyme, and garlic powder. Season with a pinch of salt and pepper.
5. **Combine & Roast:** Drizzle half of the sauce over the apples and onions, tossing gently to coat. Push the apples and onions to the sides of the pan, making space for the pork chops in the center. Place the seasoned pork chops on the baking sheet. Drizzle the remaining sauce over the pork chops.
6. **Bake:** Bake for 20-25 minutes, or until the pork chops are cooked through (internal temperature reaches 145°F/63°C) and the apples and onions are tender and slightly caramelized. If desired, you can broil for the last 2-3 minutes for extra browning.
7. **Rest & Serve:** Remove the pan from the oven and let the pork chops rest for 5 minutes before serving. Garnish with fresh parsley, if using.
