Instructions
1. **Cook the Sweet Potato:** Steam or boil the cubed sweet potato until very tender, about 10-15 minutes. Drain well and mash thoroughly with a fork or potato masher.
2. **Prepare the Mixture:** In a large bowl, combine the mashed sweet potato, rinsed black beans, breadcrumbs, red onion, minced garlic, chili powder, cumin, and smoked paprika. Season with salt and black pepper to taste.
3. **Mash and Mix:** Using a fork or potato masher, gently mash the black beans into the sweet potato mixture until mostly combined, leaving some texture for the burgers. Add the 2 tablespoons of olive oil and mix well to ensure everything is incorporated and the mixture holds together.
4. **Form the Patties:** Divide the mixture into 4-6 equal portions and form them into patties, about 3/4-inch thick. If the mixture is too sticky, wet your hands slightly.
5. **Cook the Burgers:** Heat a large skillet or grill pan over medium heat with a drizzle of olive oil. Cook the patties for 5-7 minutes per side, or until golden brown and heated through.
6. **Serve:** Serve the sweet potato and black bean burgers on your favorite buns with your preferred toppings such as lettuce, tomato, avocado, red onion, and a dollop of sriracha mayo or classic ketchup.
Short Tips
* For extra flavor, roast the sweet potato instead of boiling or steaming.
* If your mixture is too wet, add a little more breadcrumbs. If it’s too dry, add a tiny bit of water or more olive oil.
* These burgers can be made ahead of time and stored in the refrigerator for up to 3 days. Reheat gently in a pan or oven.
* Experiment with different seasonings! A pinch of cayenne pepper for a kick or some dried oregano for an earthy aroma would be delicious.
