Instructions
1. In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, spicy pepper jelly, and garlic powder. Mix well until everything is evenly incorporated.
2. Using a small spoon or a mini ice cream scoop, form the cheese mixture into 1-inch balls.
3. Place the panko breadcrumbs in a shallow dish. Roll each cheese ball in the breadcrumbs, pressing gently to ensure they are fully coated.
4. Lightly spray the air fryer basket with non-stick cooking spray. Arrange the cheese balls in a single layer in the air fryer basket, making sure not to overcrowd. You may need to work in batches.
5. Air fry at 375°F (190°C) for 6-8 minutes, or until the cheese bites are golden brown and heated through.
6. Carefully remove the cheese bites from the air fryer and let them cool for a minute or two before serving.
7. Garnish with fresh chives, if desired. Serve immediately with extra pepper jelly for dipping, if you like!
