#### Instructions:
1. Lightly grease an 8×8 inch baking pan with non-stick cooking spray or line with parchment paper, leaving an overhang on two sides for easy lifting. Set aside.
2. In a medium saucepan, combine the granulated sugar and corn syrup. Stir in the cold water.
3. Heat the mixture over medium-high heat, stirring constantly, until the sugar is completely dissolved and the mixture comes to a rolling boil. Continue to boil for 1 minute without stirring.
4. Remove the saucepan from the heat. Carefully whisk in both the fruit-flavored gelatin and the unflavored gelatin until thoroughly dissolved and no lumps remain.
5. If using, stir in the vanilla extract and a few drops of food coloring until the desired shade is achieved.
6. Pour the gelatin mixture into the prepared baking pan.
7. Refrigerate for at least 4 hours, or preferably overnight, until the gumdrops are firm and set.
8. Once firm, use the parchment paper overhang to lift the slab of gumdrops from the pan.
9. Place the slab on a cutting board and cut into 1/2-inch squares using a sharp knife or pizza cutter.
10. Place about 1/2 cup of granulated sugar in a shallow dish. Toss the gumdrop squares in the sugar, coating them completely.
11. Transfer the sugared gumdrops to an airtight container. Store at room temperature for up to 2 weeks.
