Instructions:
1. Prepare your dish:
Use a rectangular or square dish (about 9×9 inches or similar). Line the base with a single layer of Tennis biscuits, covering the bottom fully.
2. Make the filling:
In a large bowl, fold the caramel condensed milk into the whipped cream gently until well combined. The mixture should be light, smooth, and fluffy.
3. Build the layers:
- Spread half of the caramel cream mixture over the biscuit base.
- Sprinkle half of the grated Peppermint Crisp evenly over the cream layer.
- Add a second layer of Tennis biscuits on top.
- Spread the remaining caramel cream mixture over the second biscuit layer.
- Finish with the rest of the Peppermint Crisp sprinkled generously on top.
4. Chill:
Cover the dish with plastic wrap or a lid and refrigerate for at least 4–6 hours, or overnight. This allows the biscuits to soften and the flavors to meld beautifully.
5. Serve:
Slice into squares and serve chilled. It’s rich, sweet, and guaranteed to impress!
