This is not your ordinary fruitcake! Packed with pecans, dried apricots, sweet dates, and vibrant maraschino cherries, this recipe skips the citron and mixed fruit often found in traditional versions. Passed down from my husband’s cousin, this simple yet elegant fruitcake is my absolute favorite—and I hope it becomes yours too.
Ingredients
Dry Ingredients
- 3/4 cup sugar
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
Wet Ingredients
- 3 large eggs
- 2 teaspoons vanilla extract
Fruit and Nuts
- 8 ounces dried apricots, chopped
- 8 ounces dates, chopped
- 12 ounces pecan halves
- 1 cup whole maraschino cherries, drained

Step 1: Preheat and Prepare the Pan
- Preheat your oven to 325°F (165°C).
- Grease a tube pan thoroughly or line the bottom with parchment paper for easier removal.
