Ingredients:

For the Pie Crust:

  • 1 1/4 cups all-purpose flour

  • 2–3 tablespoons ice water

For the Peach Filling:

  • 6–7 fresh peaches, peeled, pitted, and sliced (about 5 cups)
    Alternatively, use 1 (29 oz) can of peaches, drained
  • 1/2 cup granulated sugar
  • 2 tablespoons brown sugar
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 tablespoon cornstarch (for thickening)

For the Cobbler Topping:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter, cold and cubed
  • 1/4 cup boiling water

For Brushing (Optional):

  • 1 egg, lightly beaten (for brushing the pie crust)
