Instructions:
1. In a large bowl, whisk together the flour, salt, and instant yeast.
2. Add the warm water and stir until a sticky, shaggy dough forms.
3. Cover the bowl with plastic wrap or a clean kitchen towel.
4. Let the dough rest at room temperature for 12–18 hours (overnight is best).
5. After resting, the dough will look bubbly and loose.
6. Gently turn the dough out onto a well-floured surface.
7. With floured hands or a spatula, fold and shape it into a loose rectangle. Be gentle to keep the air bubbles.
8. Let the shaped dough rest for 30 minutes, uncovered.
9. Meanwhile, preheat your oven to 450°F (230°C). Place a baking stone or heavy baking tray inside to heat up.
10. Place the dough on a piece of parchment paper.
11. Carefully slide the parchment paper and dough onto the preheated stone or tray.
12. Bake for 25–30 minutes, or until the bread is golden brown and crusty on the outside.
13. Remove from the oven and let it cool on a wire rack.
