Mom’s Spiced Apple Cake

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan or cake pan.
  2. In a bowl, toss the apple slices with lemon juice, cinnamon, and nutmeg. Set aside to let the flavors soak in.
  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each. Stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, baking powder, and a pinch of salt.
  6. Gradually add the dry mixture to the wet ingredients, alternating with the milk. Stir until just combined—don’t overmix.
  7. Spread half the batter in the prepared pan. Arrange half the apples over the batter. Repeat with the remaining batter and apples.
  8. Bake for 40–45 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  9. Let the cake cool slightly. Dust with powdered sugar before serving.

This cake is absolutely lovely served warm or at room temperature. Add a scoop of vanilla ice cream or a drizzle of caramel sauce for a truly indulgent treat.
