Instructions

1. **Prepare your pan:** Lightly grease an 8×8 inch baking pan or line it with parchment paper, leaving an overhang on the sides for easy lifting.
2. **Melt the chocolate:** In a medium microwave-safe bowl, combine the chocolate chips and sweetened condensed milk. Microwave on high for 1 minute.
3. **Stir and re-microwave:** Remove from the microwave and stir well with a spatula until smooth. If there are still lumps, microwave for another 30 seconds, then stir again. Repeat in 15-second intervals until the mixture is completely melted and smooth. (Alternatively, you can melt these ingredients in a double boiler over simmering water, stirring constantly.)
4. **Add flavor:** Stir in the vanilla extract and salt (if using). If adding nuts, fold them in now.
5. **Pour and chill:** Pour the fudge mixture into the prepared pan and spread evenly.
6. **Set and serve:** Refrigerate for at least 2 hours, or until firm. Once set, lift the fudge out of the pan using the parchment paper overhang and cut into small squares. Enjoy!

Short Tips

* **Don’t overcook the chocolate:** Overheating can cause the chocolate to seize. Go in short bursts and stir thoroughly.
* **For extra flavor:** Add a teaspoon of espresso powder with the chocolate for a deeper, richer taste.
* **Get creative with mix-ins:** Beyond nuts, consider mini marshmallows, crushed peppermint candies, or shredded coconut.
* **Storage:** Store leftover fudge in an airtight container at room temperature for up to a week, or in the refrigerator for longer freshness.
