Make-Ahead & Freezer-Friendly Breakfast Burritos

🍳 Instructions

  1. Cook the meat:
    In a large skillet over medium heat, cook the sausage or bacon until browned. Remove and set aside.
  2. Cook the veggies:
    In the same pan, sauté the onion and bell pepper until soft. Add hash browns if using and cook until golden.
  3. Scramble the eggs:
    In a bowl, whisk eggs with milk, salt, and pepper. Pour into the skillet and scramble gently until just cooked. Don’t overcook!
  4. Assemble the burritos:
    Lay out the tortillas. Add a scoop of eggs, cooked meat, sautéed veggies, and a sprinkle of cheese to each.
  5. Wrap & freeze:
    Fold in the sides and roll up tightly. Wrap each burrito in foil or parchment paper. Place in a freezer-safe bag or airtight container.

🔁 To Reheat

  • Microwave (from frozen): Unwrap and heat on high for 2–3 minutes, turning halfway.
  • Oven (wrapped): Bake at 350°F (175°C) for 20–25 minutes.
