Instructions

Step 1: Sear the Meat

  1. Set the Instant Pot to Sauté mode. Season the chuck roast generously with salt and pepper.
  2. Add olive oil to the pot, then sear the roast on each side for 3-4 minutes until browned. Remove the roast and set it aside.

Step 2: Sauté the Onion and Garlic

  1. Add the onion and garlic to the Instant Pot and sauté for 1-2 minutes, scraping up any browned bits from the bottom.

Step 3: Add Broth and Seasonings

  1. Stir in the beef broth, Worcestershire sauce, and tomato paste. Return the roast to the pot.
  2. Add the thyme and rosemary, placing the herbs on top of the roast.

Step 4: Pressure Cook the Roast

  1. Lock the lid and set the Instant Pot to Pressure Cook on High for 60 minutes. Make sure the valve is set to Sealing.
  2. Once done, let the pressure naturally release for 10-15 minutes, then carefully turn the valve to venting for a quick release.

Step 5: Add Vegetables

  1. Open the lid, add the potatoes and carrots, and stir to combine.
  2. Replace the lid and cook on High Pressure for 5 minutes. Allow a quick release of pressure.

Step 6: Make the Gravy (Optional)

  1. Remove the roast and vegetables from the Instant Pot. Turn the pot back to Sauté mode.
  2. Mix 1 tbsp of cornstarch with 2 tbsp of cold water and stir it into the liquid to thicken into gravy (optional).

Step 7: Serve

  1. Slice or shred the pot roast and serve with the potatoes, carrots, and gravy. Garnish with fresh thyme or parsley, if desired.

Conclusion

This Instant Pot Pot Roast is everything you want in a cozy meal—savory, tender, and full of flavor. It’s ready in a fraction of the time of traditional roasts and makes a perfect dish for family dinners or gatherings. Serve it up with the rich gravy, and enjoy each bite!
