Instructions:

Season the steak with salt and pepper. Drizzle with olive oil and let it sit at room temperature for 15–20 minutes. Grill over medium-high heat for 4–5 minutes per side for medium-rare, or until desired doneness. Let rest 5–10 minutes before slicing thinly against the grain.
2️⃣ Make the Elote Mix:
In a bowl, combine grilled corn kernels, mayonnaise, sour cream, cotija cheese, minced garlic, lime juice, and chili powder. Stir until creamy and well mixed. Taste and adjust lime or seasoning as needed.
3️⃣ Warm the Tortillas:
Lightly warm tortillas on a dry skillet or grill until soft and slightly charred around the edges.
4️⃣ Assemble the Tacos:
Layer sliced steak onto each tortilla. Top with a generous spoonful of the elote mixture.
5️⃣ Garnish & Serve:
Sprinkle with fresh cilantro. Add sliced jalapeños, extra cotija, or a squeeze of lime for a flavor boost.
