### Instructions
1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
2. In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
3. Add the chopped onion to the skillet with the cooked beef and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
4. Stir in the diced tomatoes (undrained), enchilada sauce, green chilies (undrained), frozen corn, chili powder, cumin, salt, and black pepper. Bring to a simmer, then reduce heat to low and let it cook for 10 minutes, allowing the flavors to meld.
5. While the meat mixture is simmering, prepare the cornbread topping according to the package directions. In a medium bowl, combine the cornbread mix, egg, and milk. Stir until just combined (don’t overmix!).
6. Pour the meat mixture into the prepared baking dish, spreading it evenly.
7. Carefully spoon or dollop the cornbread batter over the top of the meat mixture, spreading it as evenly as possible.
8. Bake for 20-25 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
9. Remove the casserole from the oven and sprinkle the shredded cheese over the top of the cornbread.
10. Return to the oven for another 5-10 minutes, or until the cheese is melted and bubbly.
11. Let the casserole rest for 5-10 minutes before serving.
