Instructions

For the Apple Pie Filling:

1. In a medium skillet, melt the butter over medium heat. Add the diced apples and cook for 5-7 minutes, or until softened but still holding their shape.
2. Stir in the 1/4 cup granulated sugar, 1 teaspoon cinnamon, nutmeg, and lemon juice. Cook for another 2-3 minutes, stirring occasionally, until the apples are tender and the liquid has slightly thickened. Remove from heat and let cool completely.

Assembling the Egg Rolls:

1. Lay an egg roll wrapper on a clean, dry surface with one corner pointing towards you (diamond shape).
2. Place about 1-2 tablespoons of the cooled apple filling onto the center of the wrapper, closer to the corner facing you.
3. Fold the bottom corner over the filling, tucking it in snugly.
4. Fold in the left and right corners towards the center.
5. Brush the top corner of the wrapper with the beaten egg wash.
6. Roll the egg roll tightly from the bottom towards the top, sealing the seam with the egg wash.
7. Repeat with the remaining wrappers and filling.

Frying the Egg Rolls:

1. Pour about 2-3 inches of vegetable oil into a large, heavy-bottomed pot or Dutch oven. Heat the oil to 350°F (175°C).
2. Carefully place 2-3 egg rolls into the hot oil (do not overcrowd the pot). Fry for 2-3 minutes per side, or until golden brown and crispy.
3. Remove the fried egg rolls with a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil.

Cinnamon Sugar Topping and Serving:

1. In a small bowl, combine the 1/4 cup granulated sugar and 1 teaspoon cinnamon for the topping.
2. While the egg rolls are still warm, gently roll them in the cinnamon sugar mixture until evenly coated.
3. Warm the caramel sauce slightly if desired.
4. Serve the crispy apple pie egg rolls immediately with the caramel dip on the side.

* Don’t overfill your egg rolls, or they’ll be hard to seal.
* Ensure the apple filling is completely cool before wrapping to prevent soggy wrappers.
