Instructions
1. Prepare the Cake: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan (or two 8-inch pans for a layered cake).
2. Sift Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
3. Cream Butter and Sugar: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
4. Add Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
5. Alternate Dry and Wet: Gradually add the dry ingredients to the wet ingredients, alternating with the chilled heavy cream, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
6. Bake: Pour the batter into your prepared cake pan(s) and spread evenly. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
7. Cool: Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
Prepare the Optional Cream Cheese Frosting:
1. Beat Cream Cheese and Butter: In a large bowl, beat the softened cream cheese and butter together until smooth and creamy.
2. Add Sugar and Vanilla: Gradually add the sifted powdered sugar, one cup at a time, beating until smooth and combined. Stir in the vanilla extract.
3. Adjust Consistency: If the frosting is too thick, add milk or cream one tablespoon at a time until you reach your desired consistency.
4. Frost and Serve: Once the cake is completely cool, frost it with the cream cheese frosting and enjoy!
short tips
* For an extra moist cake, don’t overmix the batter. Overmixing develops the gluten in the flour, which can lead to a tougher cake.
* Make sure your butter and cream cheese are at room temperature for the frosting. This ensures a smooth, lump-free consistency.
* Chill the cake for at least 30 minutes after frosting to help the frosting set.
* Get creative with toppings! Fresh berries, chocolate shavings, or a dusting of powdered sugar can enhance the presentation.
