Instructions
1. In a large bowl, combine the black-eyed peas, black beans, corn, red bell pepper, green bell pepper, red onion, and cilantro.
2. In a separate small bowl, whisk together the olive oil, red wine vinegar, lime juice, honey (or agave), minced garlic, chili powder, and cumin. Season with salt and pepper to taste.
3. Pour the dressing over the bean and vegetable mixture. Toss gently to ensure all ingredients are well coated.
4. Cover the bowl and refrigerate for at least 30 minutes (or ideally 2-3 hours) to allow the flavors to meld.
5. Serve chilled with tortilla chips, as a side dish, or even as a topping for grilled chicken or fish.
Short Tips
* For an extra kick, add a finely diced jalapeño to the caviar mixture.
* If you don’t have fresh cilantro, dried cilantro can be used, but fresh is highly recommended for the best flavor.
* This dish tastes even better the next day as the flavors deepen.
* Adjust the amount of honey or agave nectar based on your sweetness preference.
* For a smoky flavor, consider adding a pinch of smoked paprika to the dressing.
* Drain and rinse your canned goods thoroughly to reduce sodium and improve texture.
