🧑🍳 Instructions
1. Mash the Chickpeas
In a medium bowl, lightly mash chickpeas with a fork or potato masher, leaving some texture. Add a spoonful or two of the reserved chickpea liquid (aquafaba) to help bind the mixture if needed.
2. Add the Crunchy Stuff
Stir in diced celery, onion, and grapes (if using).
3. Make it Creamy & Flavorful
Add mayo, Dijon mustard, dill, poultry seasoning, salt, and pepper. Mix everything until fully combined and creamy.
4. Taste & Adjust
Add more mustard or dill if you like it zippier, or an extra spoon of mayo for creaminess.
5. Serve on Cucumber Chips
Spoon the chickpea salad onto cucumber slices and serve immediately—or chill the salad first for even better flavor.
