Instructions:

1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
2. In a large skillet over medium-high heat, brown the ground beef, breaking it up with a spoon. Drain any excess fat.
3. Stir in the taco seasoning and water. Bring to a simmer and cook for 5-7 minutes, or until most of the liquid has evaporated and the beef is well coated.
4. Remove the skillet from the heat. Stir in the black beans, corn, and Rotel diced tomatoes.
5. In a separate medium bowl, combine the softened cream cheese and sour cream until smooth. Fold in 1 cup of the shredded Mexican cheese blend.
6. Spread half of the crushed Doritos evenly over the bottom of the prepared baking dish.
7. Spoon the beef and vegetable mixture over the Doritos.
8. Dollop spoonfuls of the cream cheese mixture over the beef layer and gently spread it out.
9. Sprinkle the remaining 1 cup of shredded Mexican cheese blend over the cream cheese layer.
10. Top with the remaining crushed Doritos.
11. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
12. Let stand for 5 minutes before serving.

* For an extra kick, add a pinch of red pepper flakes to the beef mixture.
* Feel free to use other types of Doritos if you prefer, like Cool Ranch or Spicy Nacho.
