**Instructions**

1. In a food processor, combine the rolled oats, shredded carrots, pitted dates, shredded coconut, chopped walnuts/pecans, almond butter, maple syrup/honey (if using), cinnamon, nutmeg, ginger, and salt.
2. Process until the mixture comes together and forms a sticky dough. If the mixture seems too dry, add water or milk one tablespoon at a time until it reaches a workable consistency. Be careful not to add too much liquid, as it can make the bites too sticky.
3. Roll the mixture into 1-inch balls.
4. If desired, roll the energy bites in extra shredded coconut, finely chopped nuts, or cinnamon sugar for an extra touch of flavor and texture.
5. Place the finished energy bites on a plate or baking sheet lined with parchment paper.
6. Refrigerate for at least 30 minutes to allow them to firm up. Store in an airtight container in the refrigerator for up to a week, or freeze for longer storage.
