Brownie Pecan Pie

  • 1 cup (200g) light brown sugar
  • 2/3 cup (200ml) light corn syrup or maple syrup
  • 2 large eggs
  • 2 tbsp unsalted butter, melted
  • 1/2 tsp vanilla extract
  • 1 1/2 cups (150g) chopped pecans

👩‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch pie dish or line with parchment.
  2. Make the brownie base: In a bowl, whisk melted butter and sugar until smooth. Add eggs and vanilla. Stir in cocoa, flour, and salt until just combined. Spread evenly into the prepared dish.
  3. Bake the brownie layer for 15 minutes. Remove and set aside (it will not be fully baked).
  4. Make the pecan topping: In another bowl, whisk brown sugar, corn syrup, eggs, melted butter, and vanilla until smooth. Stir in chopped pecans.
  5. Carefully spoon the pecan mixture over the partially baked brownie layer.
  6. Bake for an additional 30–35 minutes, or until the center is just set and slightly puffed.
  7. Cool completely before slicing. Serve as-is or with whipped cream or vanilla ice cream.

🍽️ Tips:

  • For easier cutting, chill the pie before slicing.
  • Use maple syrup instead of corn syrup for a richer flavor.
