- 1 cup (200g) light brown sugar
- 2/3 cup (200ml) light corn syrup or maple syrup
- 2 large eggs
- 2 tbsp unsalted butter, melted
- 1/2 tsp vanilla extract
- 1 1/2 cups (150g) chopped pecans
👩🍳 Instructions:
- Preheat oven to 350°F (175°C). Grease a 9-inch pie dish or line with parchment.
- Make the brownie base: In a bowl, whisk melted butter and sugar until smooth. Add eggs and vanilla. Stir in cocoa, flour, and salt until just combined. Spread evenly into the prepared dish.
- Bake the brownie layer for 15 minutes. Remove and set aside (it will not be fully baked).
- Make the pecan topping: In another bowl, whisk brown sugar, corn syrup, eggs, melted butter, and vanilla until smooth. Stir in chopped pecans.
- Carefully spoon the pecan mixture over the partially baked brownie layer.
- Bake for an additional 30–35 minutes, or until the center is just set and slightly puffed.
- Cool completely before slicing. Serve as-is or with whipped cream or vanilla ice cream.
🍽️ Tips:
- For easier cutting, chill the pie before slicing.
- Use maple syrup instead of corn syrup for a richer flavor.
