🔪 Instructions
- Marinate the Beef
In a medium bowl, combine the sliced flank steak with 1 tbsp soy sauce, 1 tbsp oyster sauce, Shaoxing wine, and 1 tsp cornstarch. Toss to coat well, then let it sit for at least 15–20 minutes while you prepare the rest of your ingredients. - Sear the Beef
Heat 1 tbsp oil in a large wok or skillet over high heat until shimmering. Add the marinated beef in a single layer. Let it sear undisturbed for 1–2 minutes to get some browning, then stir-fry for another 1–2 minutes until just cooked through. Remove the beef from the pan and set aside. - Stir-Fry the Veggies
Add the remaining 1 tbsp of oil to the same pan. Toss in the minced garlic and sliced onion and stir-fry for about 30 seconds, just until fragrant. Then add the bell peppers and cook for 2–3 minutes, until they’re vibrant and slightly tender but still crisp. - Bring It All Together
Return the cooked beef to the pan with the vegetables. Add the black pepper, 2 tbsp oyster sauce, 1 tbsp soy sauce, and 1 tsp sugar. Stir everything well to combine and coat the beef and veggies in that glossy, flavorful sauce. - Final Touches & Serve
Let everything cook together for another minute, just until hot and well-mixed. Serve immediately over hot steamed rice. Garnish with chopped green onions or sesame seeds if you like a little extra flair.
🍽️ Tips for the Best Stir-Fry
- Slice the beef thinly: This helps it cook quickly and stay tender. Be sure to cut against the grain!
- Use fresh cracked pepper: It makes a big difference in flavor compared to pre-ground pepper.
- High heat is key: Stir-frying is all about quick cooking over high heat, so don’t crowd the pan and keep things moving.
- Don’t overcook the veggies: You want them crisp-tender to balance the soft beef and rich sauce.
