1. Prep apples & dry mix:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, salt, and nutmeg.
2. Combine wet ingredients:
In a separate bowl, beat the eggs. Add milk, melted butter, and vanilla. Whisk until smooth.
3. Mix batter:
Pour wet ingredients into the dry mix. Stir gently until just combined (don’t overmix).
Fold in diced apples with a spatula.
4. Shape & bake:
Drop ÂĽ-cup scoops of batter onto the prepared baking sheet, leaving 2 inches between each.
Bake for 18–22 minutes, or until golden and a toothpick comes out clean.
5. Cool:
Let the fritters cool on the pan for 5 minutes, then transfer to a wire rack.
6. Make the glaze:
Whisk powdered sugar with 2 tbsp milk, vanilla, and cinnamon (if using).
Add more milk, 1 tsp at a time, until drizzle consistency is reached.
7. Glaze & serve:
Drizzle glaze over warm fritters and serve. The glaze sets in about 10 minutes — but they’re best warm!
