### Instructions:
**For the Fritters:**
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat. Lightly grease the parchment paper/mat if needed.
2. In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt.
3. In a separate medium bowl, whisk together the egg, milk, melted butter, and vanilla extract.
4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are perfectly fine.
5. Gently fold in the finely diced apple.
6. Using two spoons or a small ice cream scoop, drop spoonfuls of the batter onto the prepared baking sheet, leaving about 2 inches between each fritter. They will spread slightly.
7. Bake for 12-15 minutes, or until golden brown and cooked through. The fritters should feel firm to the touch when gently pressed.
8. While the fritters are baking, prepare the glaze.
**For the Cinnamon Glaze:**
1. In a small bowl, whisk together the powdered sugar, milk (or apple cider), and cinnamon until smooth and free of lumps. Add more milk a teaspoon at a time if the glaze is too thick, or more powdered sugar if it’s too thin.
2. Once the fritters are out of the oven, let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
3. Once the fritters are cool enough to handle (warm is best for glazing, but not hot), drizzle generously with the cinnamon glaze. You can dip them, brush them, or simply spoon the glaze over.
4. Let the glaze set for a few minutes before serving.
### Short Tips:
* **Don’t overmix the batter!** Overmixing can lead to tough fritters. A few lumps are okay.
* **Vary your apples!** Granny Smith provides a nice tartness, while Fuji or Honeycrisp offer more sweetness.
* **Add a pinch of ginger** to the fritter batter for an extra layer of warmth.
* **For extra crispiness**, broil the fritters for the last minute or so, keeping a close eye on them to prevent burning.
* **Storage:** Store leftover fritters in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 4 days. Reheat gently in the microwave or a warm oven.
