### Instructions
1. **Preheat & Prep:** Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper or a silicone baking mat.
2. **Combine Dry Ingredients:** In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt.
3. **Combine Wet Ingredients:** In a separate medium bowl, whisk together the milk, applesauce, melted butter, egg, and vanilla extract until well combined.
4. **Combine Wet & Dry:** Pour the wet ingredients into the dry ingredients. Stir with a spoon or rubber spatula until just combined. Be careful not to overmix; a few lumps are okay.
5. **Fold in Apples:** Gently fold in the finely diced apple until evenly distributed throughout the dough.
6. **Form Fritters:** Drop spoonfuls of the dough onto the prepared baking sheet, leaving about 2 inches between each fritter. They don’t need to be perfectly shaped; a rustic look is part of their charm! You should get about 10-12 fritters.
7. **Bake:** Bake for 12-15 minutes, or until the fritters are golden brown and a toothpick inserted into the center comes out clean.
8. **Prepare Glaze:** While the fritters are baking, prepare the cinnamon glaze. In a small bowl, whisk together the powdered sugar, 2 tablespoons of milk (or apple cider), cinnamon, and vanilla extract until smooth. If the glaze is too thick, add more milk a teaspoon at a time until it reaches a drizzling consistency. If it’s too thin, whisk in a little more powdered sugar.
9. **Glaze & Serve:** Once the fritters are out of the oven, let them cool on the baking sheet for a few minutes. While still warm, drizzle generously with the cinnamon glaze. Serve immediately and enjoy!
### Short Tips
* **Don’t Overmix:** Overmixing the dough can lead to tough fritters. Mix until just combined.
* **Dice Apples Finely:** Smaller apple pieces ensure they cook through evenly and are distributed well.
* **Warm Glaze is Best:** Glazing the fritters while they are still warm helps the glaze adhere nicely and absorb a little, adding moisture.
* **Get Creative with Glaze:** For an extra autumnal touch, try adding a pinch of pumpkin pie spice to your glaze, or a tiny splash of maple syrup.
* **Storage:** Store any leftover fritters in an airtight container at room temperature for up to 2-3 days, though they are best enjoyed fresh!
