These little bites of heaven are a guaranteed crowd-pleaser. Perfect for Thanksgiving, game days, potlucks, or holiday parties, these Bacon-Wrapped Little Smokies are sweet, salty, and smoky with an optional hint of heat. Trust me, you’ll need to make a double batch because they disappear fast.
Ingredients
- 1 lb Little Smokies sausages (about 35-40 pieces)
- 12 slices of bacon, cut into thirds (you’ll get 36 smaller strips)
- 3/4 cup brown sugar, packed
- 1/4 tsp cayenne pepper (optional, for a slight kick)
- Toothpicks, for securing the bacon
Instructions
1. Preheat the Oven
- Preheat your oven to 375°F (190°C).
- Line a large baking sheet with parchment paper or aluminum foil. (This will make cleanup much easier since the brown sugar caramelizes and can stick to the pan.)
2. Prepare the Bacon and Smokies
- Cut the bacon slices into thirds, so you have 36 small strips. This size perfectly wraps around each Little Smokie.
- Wrap each Little Smokie sausage with a strip of bacon.
- Secure the bacon around the sausage by piercing it with a toothpick. Place the wrapped sausages seam-side down on the prepared baking sheet.
3. Add the Sweet and Spicy Coating
- In a small bowl, mix together 3/4 cup brown sugar and 1/4 teaspoon cayenne pepper (if using).
- Sprinkle the brown sugar mixture generously over each bacon-wrapped Smokie. Make sure they are evenly coated so the sugar caramelizes beautifully in the oven.
